Red bell pepper & radicchio salad

  • 2 red bell peppers
  • 1 head radicchio, separated into leaves
  • 4 cooked whole beets, cut into matchsticks
  • 12 radishes, sliced
  • 4 scallions, finely chopped
  • 4 tbsp vinaigrette
  • crusty bread, to serve
How to Make It
  1. Core and seed the bell peppers and cut into rounds.
  2. Arrange the radicchio leaves in a salad bowl. Add the bell pepper, beets, radishes, and scallions. Drizzle with the vinaigrette and serve with crusty bread.
