Zucchini stuffed rolls in fresh cucumber dip recipe

For the Rolls
  • 2 big marinated zucchini sliced (use a potato chip slicer or a mandoline)
For the Filling
  • Carrot sticks
  • 1/3 cup diced tomato
  • 1/3 cup cucumber sticks
  • 1/3 carrot sticks
  • 1/3 cup diced avocado
  • 3 tbsp fresh dill
  • A handful arugula leaves
  • 1 tbsp fresh green onion
  • Mung bean sprouts
  • Sun flower sprouts
  • 2 tbsp almond butter
How to Make It
  1. Marinate the vegetable sticks with olive oil, garlic, lemon and salt for 30 minutes.
  2. Sprinkle the sliced zucchini with salt and place them over a towel to absorb liquids.
  3. Dice the tomatoes and the avocado and add a little oil, pepper, almond butter and lemon.
  4. Use a mat to roll the zucchini filled with all the ingredients.
  5. Serve with cucumber dip on top, with a sprinkle of poppy seeds and fresh salad.
