- 1 cup vegetable stock
- 1 sprig rosemary
- ¼ cup olive oil
- 1 pkg Klondike Gourmet Medley Potatoes (about 4 cups)
- 1 tbsp seasoned salt
- 1 tbsp ground pepper
- 1 tbsp Italian seasoning herb blend
How to Make It
- Pour vegetable stock into Instant Pot. Add sprig of rosemary and olive oil.
- Place steam rack inside Instant Pot.
- Clean potatoes and place on top of steam rack.
- Sprinkle potatoes with seasoned salt, ground pepper, and Italian seasoning.
- Secure lid on Instant Pot and pressure cook on low for 10 minutes. Let steam release naturally.
- Once steam has been released, remove lid.
- Serve Country Potato Medley with your favorite dinner.
