Pear & roquefort salad recipe

  • Yield: 4 Servings


  • Few leaves of lollo rosso
  • Few leaves of radicchio
  • Few leaves of mâche
  • 2 ripe pears
  • Black pepper
  • Whole fresh chives, to garnish
For the Dressing
  • 2 oz/55 g Roquefort cheese
  • ⅔ cup plain yogurt
  • 2 tbsp chopped fresh chives
  • Black Pepper
How to Make It
  1. Place the cheese in a bowl and mash with a fork. Gradually blend the yogurt into the cheese to make a smooth dressing. Add the chives and season with pepper to taste.
  2. Tear the lollo rosso, radicchio, and mâche leaves into manageable pieces. Arrange the salad greens on a large serving platter or divide them among individual serving plates.
  3. Cut the pears into fourths and remove the cores. Cut the quarters into slices. Arrange the pear slices over the salad leaves.
  4. Drizzle the dressing over the pears and garnish with a few whole chives.
