Caper pate with asparagus sauce recipe

Chilled almond butter with caper seeds and fresh coconut with herbs.

Ingredients

  • 1/3 cup fresh coconut flesh
  • ½ cup almond butter
  • 3 tbsp finely chopped celery
  • 1 tbsp finely chopped fresh onion
  • 1 tbsp finely chopped shallot
  • Pinch of oregano
  • Pinch of white ground pepper
  • 1 tbsp coconut oil
  • 1 ½ tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp vinegar
  • ½ tsp agave nectar
  • 1/3 cup finely diced cucumber
  • 2 tbsp finely chopped cilantro
  • 2 tsp capers seeds
  • 1 medium minced garlic clove
  • Water if needed
How to Make It
  1. In blender put all the ingredients except the cucumber.
  2. Add little water if needed and blend until the ingredients mix well.
  3. Put it in a bowl and add the diced cucumber.
  4. Use a strainer to remove all the liquids by pressing with a spoon. Use a round mold, fill it and refrigerate.
