Vegetarian salad wrap recipe

Ingredients

  • 1 wholemeal wrap
  • 40 g hummus
  • 110 g tinned four-bean mix, drained and rinsed
  • 1 small handful baby spinach leaves
  • ¼ medium carrot, grated
  • ¼ small beetroot, peeled and grated
  • ½ medium tomato, sliced
  • 1 small handful fresh parsley, chopped
How to Make It
  1. To serve, place the wrap on a serving plate and spread over the hummus.
  2. Place the four-bean mix, spinach, carrot, beetroot, tomato and parsley down the middle of the wrap.
  3. Fold over the end and roll up to enclose the filling.
