  • Yield: 8 Servings
  • Preparation Time: 30 Minutes

Ingredients

  • 1-lb New York strip steak
  • 2 tbsp Worcestershire sauce
  • 1 tsp freshly diced garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 medium onion
  • Olive oil
  • 2 garlic cloves, minced
  • ½ cup water
  • 1 cup thinly sliced green cabbage
  • ½ cup chopped cilantro
  • 1 lime juice and zest
  • ¼ cup golden raisins
  • Salt and pepper to taste
  • Flour tortillas
Spice Mix
  • ½ tsp seasoned salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp cayenne pepper
How to Make It
  1. Cut New York strip steak into thin slices. Place in large bowl. Add Worcestershire sauce and diced garlic; mix together and marinate for 15 minutes.
  2. While steak is marinating, clean and slice bell peppers and onion into thin, lengthwise cuts. In a small bowl, whisk the ingredients for the spice mix (bottom of the ingredient list) together and set aside until ready to use.
  3. Heat Instant Pot on Sauté mode. Add enough olive oil to lightly coat bottom of pot. When hot, remove New York strip steak from marinade and sauté for about 1 minute.
  4. Add sliced bell peppers, onion, garlic, spice mix, and ½ cup water and ⅓ cup of the marinade.
  5. Secure lid and select Steam mode. Steam for 5 minutes. When finished, do a quick release.
  6. Remove lid and fold in cabbage, cilantro, lime juice and zest, and raisins. Add salt and pepper to taste.
  7. Place fajita mixture on a large platter accompanied by flour tortillas and freshly quartered limes.
