    Ingredients

    Caramelized Onion
    • 2 Tbsp butter
    • 1 large red onion, thinly sliced (1½ cups)
    • 1.25 cup balsamic vinegar
    White Sauce
    • 1½ cups mayonnaise
    • ½ cup sugar
    • 0.33 cup white vinegar
    • 1 Tbsp coarsely ground pepper
    Panini
    • 4 ciabatta buns, cut in half
    • ¼ cup butter, melted and divided
    • 4 (3- to 4-oz.) chicken breast cutlets
    • 1½ Tbsp taco seasoning mix
    • ¾ cup (3 oz.) crumbled blue cheese
    • 1 cup spring greens mix
    How to Make It
      Prepare Caramelized Onion
    1. Melt 2 Tbsp. butter in a medium skillet over medium heat. Add onion; cook 13 minutes or until tender and beginning to brown, stirring occasionally. Stir in balsamic vinegar; reduce heat to low, and cook, uncovered, 26 minutes or until onion is golden brown, stirring occasionally.
    2. Meanwhile, prepare White Sauce
    3. Stir together all ingredients in a medium bowl until smooth.
    4. Prepare Paninis
    5. Brush cut sides of buns with 2 Tbsp. melted butter. Cook ciabatta bun halves in batches in a preheated panini press 2 minutes or until toasted.
    6. Sprinkle cutlets with taco seasoning. Cook cutlets, in batches, in panini press 5 minutes or until done. Cut cutlets in half.
    7. Spread 1 Tbsp White Sauce on cut side of each bun half. Layer each bun bottom with a cutlet half, 2 Tbsp Caramelized Onion, 3 Tbsp. cheese, ¼ cup greens, and a bun top. Brush tops of sandwiches with remaining 2 Tbsp melted butter. Cook sandwiches in panini press 2 minutes or until golden brown
