Ingredients

  • 4 to 6 cups romaine lettuce or spinach
  • 1 to 2 cups classic coleslaw mix
  • 2 cups cubed or shredded cooked chicken
  • 1 (11-ounce) can mandarin oranges, drained
  • ¼ cup finely chopped green onions (optional)
  • ½ cup sliced almonds or cashews
  • ¾ cup wonton strips or chow mein noodles
  • ⅓ cup mayonnaise
  • 2 tablespoons rice wine vinegar
  • ¼ cup honey
  • 1 teaspoon Dijon mustard
  • ⅛ teaspoon black pepper
  • Salt
How to Make It
  1. Toss the lettuce and the coleslaw mix in a large bowl or four to six individual bowls. Place the shredded chicken, oranges, green onions, almonds, and wonton strips on top.
  2. In a small bowl, whisk together the mayonnaise and vinegar. Whisk in the honey, mustard, and pepper. Taste for seasoning and add salt, if desired. Drizzle the dressing over the salad, using 1 to 2 tablespoons per serving.
  3. Serve immediately.
