Tuna and hardboiled eggs shells pasta salad recipe

  • 1 box uncooked shells pasta
  • 6 hardboiled eggs
  • 1 chopped red bell pepper
  • 2 minced green onions
  • 2 large tuna cans in oil (well drained)
  • 1 can well-drained, seasoned black beans
  • Salt
  • Black pepper
  • Pinch of cayenne pepper
  • ½ teaspoons dried basil
  • 2-3 Tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Dijon mustard
How to Make It
  1. Cook the shells pasta as you normally would by boiling the water with salt and a little oil. Drain well and set aside when cooked.
  2. In a large mixing bowl, whisk together the mustard, oil, balsamic vinegar, and all of the spices.
  3. Add the chopped veggies (onions and peppers) and the cooked pasta. Mix well.
  4. Add the well-drained tuna.
  5. Finally, cut the hardboiled eggs in slices. Add the spices to the salad. Along with the drained black beans.
  6. Mix again and taste before serving. Adjust the seasonings if needed.
