Mermaid swirl fudge recipe

  • Yield: 2 (9 X 9-inch) pans


  • 4¾ cups white chocolate
  • 1 cup unsalted butter
  • ½ cup clear corn syrup
  • 2 tsp vanilla extract
  • ½ cup macadamia nuts
  • Blue food coloring
  • ½ cup macadamia nuts
  • 5 cups mini marshmallows
  • 1¼ cups mermaid-colored candies (+ extra for topping)
How to Make It
  1. Place the white chocolate, butter, and corn syrup in a pot over medium-low heat. Stir consistently until completely melted. Don’t worry if the chocolate and butter have separated. They will come together again as they cool.
  2. Remove the pot from the heat and stir the mixture with a spatula or a whisk until the chocolate and butter have fully combined. Add the vanilla extract and a drop of blue food coloring and allow to cool slightly.
  3. Add the macadamia nuts, mermaid-colored candies, and marshmallows and mix until just combined. Divide the mixture between two 9 x 9-inch square aluminum containers, and sprinkle some extra candies on top. Cover with aluminum foil and place in the freezer until set.
  4. Slice the fudge into bite-sized squares, and you’re done!
