The Instant Pot is one of the most versatile and simple appliances in your kitchen and will make any recipe easier. Try this Instant Pot mole sauce with some chopped almonds and toasted sesame seeds on top before serving.

Ingredients

  • ½ ounce oil
  • 1 large diced onion
  • minced cloves garlic
  • 1 ounce unsweetened cocoa
  • 1 ounce chile powder
  • ½ ounce cumin, ground
  • ½ teaspoon pepper
  • ½ teaspoon cinnamon, ground
  • ½ teaspoon salt
  • ¼ teaspoon cloves, ground
  • 14½ ounces canned fire-roasted tomatoes
  • 14½ ounces canned chicken broth
  • 14½ ounces water
  • skinless chicken quarters, bone-in
  • ounces raisins
  • ounces almonds, chopped
  • 2 chopped chipotle peppers
  • 1/3 ounce adobo sauce (from chipotles)
  • sesame seeds
How to Make It
  1. Mix, cocoa, garlic, chile powder, cinnamon, cumin, salt, pepper and cloves in a bowl.
  2. Set Instant pot to sauté and add onion and oil. Sauté onion for 5 minutes. Stir in the rest of the Ingredients except for chicken and sesame seeds.
  3. Tuck chicken into the sauce and close the lid on the Instant Pot. Make sure the vent is closed and cook on high for 25 minutes. Turn the Instant Pot off and vent the steam for 5 minutes. Open vent valve and pull chicken out of the sauce. Shred meat and add back to the sauce in the pot. Top with sesame seeds before serving
