Gary’s noodle soup recipe

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 3 fresh tomatoes, chopped
  • 4 cups water
  • 1 cup kale, chopped
  • 1 cup white beans, cooked
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • ½ cup small bow-tie pasta
How to Make It
  1. Heat the oil in a large saucepan over medium heat and sauté the onion and garlic until the onion is translucent.
  2. Add the tomatoes and sauté for 10 minutes.
  3. Add the water, kale, beans, parsley, basil, salt, and pepper and bring to a boil.
  4. Add the pasta and cook until done.
