Cranny Banana Bars Recipe

Enjoy life's cookies for everyoneThese bars have a mixture of so many wonderful flavors. I make them often during the holiday season

  • Yield: 2 dozen


For Bars
  • 1 cup (225 g) packed brown sugar
  • 2 bananas, sliced
  • 0.33 cup (80 ml) vegetable oil
  • ¼ cup (60 g) unsweetened applesauce
  • 6 tablespoons (90 ml) orange juice
  • 1 cup (125 g) Bob’s Red Mill white or brown rice flour
  • ½ cup (60 g) Bob’s Red Mill tapioca flour
  • 1 teaspoon (4.6 g) baking powder
  • Dash of salt
  • ½ cup (50 g) dried cranberries
  • 1 teaspoon (1.7 g) lemon or orange zest (optional)
For Glaze
  • ½ cup (60 g) powdered sugar
  • 1 tablespoon (15 ml) orange juice
  • 1 teaspoon (1.7 g) lemon or orange zest (optional)
How to Make It
  1. Preheat oven to 350°F (180°C, or gas mark 4).
  2. To Make the Bars
  3. With a mixer, cream together brown sugar, bananas, oil, applesauce, and juice. Mixture will be a little lumpy. Add in the fl ours, baking powder, and salt and mix until smooth. Stir in the cranberries and zest, if using. Pour into a 9 x 13-inch (23 x 33-cm) baking pan.
  4. Bake for about 40 minutes, or until firm in the center. Let cool
  5. To Make the Glaze
  6. Whisk together powdered sugar, juice, and zest, if using. With a spoon, drizzle the glaze over the cooled cake. Cut into bars.
