Chestnut cake recipe

  • 3 cups chestnut flour
  • 2 ounces raisins
  • 1 ounce pine nuts
  • 2 ounces shelled walnuts, chopped
  • 1 Grated orange zest
  • Rosemary
  • 3 tablespoons sugar
  • Extra-virgin olive oil
  • Salt
How to Make It
  1. Sift the flour into a bowl. Add the sugar, a pinch of salt, the orange zest and 2 cups of water. Stir well to make a smooth batter. (To avoid lumps, consider using an electric mixer). Add 2 tablespoons of olive oil, and set aside to rest for 1 hour.
  2. Oil a baking pan, and pour in the batter. Sprinkle with rosemary, raisins, pine nuts and chopped walnuts.
  3. Drizzle with 3 tablespoons of olive oil, and bake in a preheated 400° oven for 45 minutes.
