Ingredients

  • 2 ½ tablespoons coconut oil, divided
  • ¼ cup oat flour
  • ½ cup cooked split peas
  • ⅓ cup curry powder
  • ¼ teaspoon minced garlic
  • ¼ teaspoon sea salt
  • ¼ teaspoon oregano
  • ¼ cup filtered water
  • ½ cup coarsely chopped kale
  • ½ cup bite-size broccoli pieces
  • 1 cup cooked brown short, grain rice
  • ½ avocado, sliced
How to Make It
  1. Preheat oven to 375°F.
  2. Lightly grease 4-by-8 baking pan with coconut oil.
  3. In a blender, combine oat flour, split peas, oil, curry, garlic, sea salt, oregano & water.
  4. In a separate bowl, combine kale, broccoli, & brown rice. Mix well.
  5. Transfer to covered baking pan, top with flour & peas mixture. Bake for 15 minutes.
  6. Place avocado slices on top for garnish. Serve hot.
