    Tomato, sweet onion, and goat cheese salad recipe

    Ingredients

    • 2 Tbsp champagne vinegar or white wine vinegar
    • 1 Tbsp lemon juice
    • 4 tsp olive oil
    • 1 tsp Dijon mustard
    • ½ tsp salt
    • ¼ tsp black pepper
    • 4 tomatoes, cut into wedges
    • 1 sweet onion, cut into thin wedges
    • 1 cucumber, seeds removed, halved lengthwise, sliced
    • ½ cup lightly packed fresh flat-leaf parsley leaves
    • 2 ounces soft goat cheese, crumbled
    How to Make It
    1. For the dressing, whisk together vinegar, lemon juice, oil, mustard, salt, and pepper in a small bowl until blended.
    2. Toss together tomatoes, cucumber, onion, and parsley in a large bowl. Drizzle dressing over and toss to coat. Divide salad evenly among 6 plates. Sprinkle evenly with goat cheese.
