    Spiced shrimp with beans recipe

    Ingredients

    • 1 cup couscous
    • 1 pound peeled and deveined medium shrimp
    • 1 shallot, chopped
    • ½ teaspoon ground coriander
    • ½ teaspoon ground paprika
    • Kosher salt
    • 1 tablespoon olive oil
    • 1 (15.5-ounce) can white beans, rinsed
    • ¼ cup white wine vinegar
    • 2 tablespoons chopped fresh flat-leaf parsley
    How to Make It
    1. Cook the couscous according to the package directions.
    2. Cook the shrimp, shallot, coriander, paprika, and ½ teaspoon salt in the oil in a large skillet over medium-high heat until the shrimp are opaque; transfer to a plate.
    3. Add the beans, vinegar, and ½ cup water to the skillet; cook until warm. Serve with the shrimp, couscous, and parsley.
