    This is much lighter and airier than the New York-style cheesecake you may be used to.

    • Yield: 8 Servings
    • Cooking Time: 40 Minutes

    Ingredients

    • 2 eggs
    • ¼ cup butter
    • 1 cup sugar
    • 1 tsp vanilla extract
    • 1/8 tsp salt
    • 1 cup ricotta cheese
    • 2 cups milk
    • 1 cup flour
    • 3 tbsp confectioners’ sugar
    • ¼ cup frozen raspberries
    How to Make It
    1. Preheat the oven to 350.
    2. Whip the butter and sugar with a hand mixer.
    3. Add the eggs one at a time. Stir in the ricotta, vanilla and salt and combine well.
    4. Add the milk. Stir in the flour. Make sure you have a smooth batter.
    5. Pour the batter in a 9 x 13 baking dish. Bake for 40 minutes
    6. Let the cake cool, then dust with confectioners’ sugar and top with raspberries.
