    Ingredients

    Soft Noodles
    • 1 cup buckwheat flour
    • ⅓ cup warm water
    • ¼ teaspoon sea salt
    • 2 teaspoons olive oil
    Sauce
    • 2 tablespoons olive oil
    • 1 yellow onion, diced
    • 2 cloves garlic, minced
    • 2 fresh tomatoes, chopped
    • ½ green bell pepper, chopped
    • ½ red bell pepper, chopped
    • 2 tablespoons fresh parsley, chopped
    • 1 tablespoon fresh thyme, chopped
    • 1 tablespoon fresh sage, chopped
    • Sea salt to taste
    • ½ teaspoon freshly ground black pepper
    How to Make It
      To the Noodles
    1. Place the flour and salt in a large mixing bowl and make a well in the center.
    2. Add the oil and water, and mix slowly with a fork so that it blends evenly.
    3. Once the flour appears saturated, knead by hand until the dough feels pliable, about 10 – 15 minutes. Cover the dough with a towel and let rest for half an hour.
    4. Place the dough on a floured surface and roll out with a rolling pin to desired thickness.
    5. Slice into pieces one inch wide and three inches long.
    6. To cook, place the noodles in boiling water and remove when they rise to the surface, about 1 – 2 minutes.
    7. To the Sauce
    8. Heat the oil in a skillet and sauté the onion and garlic until the onion is translucent.
    9. Add the tomatoes, bell peppers, parsley, thyme, sage, salt, and pepper and simmer for 30 minutes
    10. Serve over the noodles.
