These tasty little zucchini fritters can be served on their own or by a side of spicy marinara sauce for dipping. These fritters are packed with flavor, vitamins and minerals. Even “veggie haters” will find that they enjoy these. Zucchini Fritters are always enjoyed in our family, young and old.

Ingredients

  • 1 medium zucchini, peeled
  • ¼ white onion, grated
  • 1 large egg, lightly beaten
  • 3-4 tablespoons white rice flour
  • 1 teaspoon baking powder
  • ¼ cup Parmesan cheese, grated
  • 3 tablespoons of salted butter
  • ¼ cup olive oil
  • salt and pepper to taste
How to Make It
  1. In a large bowl, grate the zucchini using the large side of a box grater. Add the grated onion and the lightly beaten egg.
  2. Stir in the Parmesan cheese, white rice flour, and baking powder. Season with salt and pepper. If the batter is too thin, you may add an additional tablespoon of white rice flour as needed to thicken the consistency.
  3. In a large skillet over medium heat, melt butter and heat oil together.
  4. Lower the heat to medium-low. Pour a heaping spoonful of the batter into the skillet and fry about two minutes on each side, or until golden brown. Continue making fritters until you have no batter left. Enjoy!
