Unfried zucchini fritters recipe

Ingredients

Batter
  • ½ cup plain seltzer
  • ½ cup rice flour
  • ½ teaspoon oregano, chopped
  • ½ tablespoon basil, chopped
  • ¼ teaspoon cumin
  • Pinch of cayenne
  • 1 clove garlic, minced
  • 1 teaspoon egg replacer
  • Sea salt to taste
  • Freshly ground black pepper to taste
Zucchini
  • 2 medium zucchini, each sliced lengthwise into 4 pieces
  • 1 cup of panko (Japanese bread crumbs), or similar
  • 2 tablespoons olive oil
How to Make It
    For the Batter
  1. Combine all ingredients in a bowl and mix well with a whisk until smooth.
  2. Preheat oven to 350°.
  3. Dip zucchini into batter then roll in breadcrumbs. Place on a nonstick baking sheet and drizzle with olive oil. Bake for 15 minutes, or until golden brown.
  4. Remove from oven and place on paper towel to absorb excess oil.
  5. Serve with a salad or Exotic Tofu Dip.
