Pumpkin soup recipe

Ingredients

  • 2 cups diced pumpkin
  • 3 tbsp olive oil
  • 3 tbsp lemon juice or more
  • 1 tbsp tamari
  • 1 medium carrot juice
  • ¼ cup fresh coriander
  • 1½ tbsp grated ginger
  • ½ cup fresh coconut flesh
  • 2 tbsp fresh finely chopped onion
  • 1 tbsp tahini
  • 2 tbsp finely chopped dill
  • ½ minced clove of garlic
  • Pinch of sumac
  • Pinch of mustard powder
  • Pinch of curry powder
  • Small hot chilly finely chopped (optional)
  • Warm water when needed
  • 2 kaffir leaves finely chopped
  • Salt
How to Make It
  1. Put all the ingredients into a food processor.
  2. Process while adding water when needed.
  3. Sprinkle with black sesame seeds, fresh coriander and finely diced red bell pepper.
