This simple mole sauce will add spice and flavor to any dish. I like to serve this over some shredded chicken or pulled pork with a sprinkle of sesame seeds.

  • Yield: 4 Servings
  • Preparation Time: 20 Minutes

Ingredients

  • 36 ounces chicken broth
  • 1½ ounces olive oil
  • 8 ounces onion, finely chopped
  • 1½ ounces garlic, chopped
  • 1 teaspoon oregano, dried
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • 1¼ ounces chili powder
  • 1 ½ ounces all-purpose flour
  • ounces chopped dark chocolate
How to Make It
  1. Heat olive oil in a large pan on medium low heat and add onion, garlic, cumin, oregano and cinnamon to the oil. Cover the pan and cook for 10 minutes until onion is just tender. Stir occasionally.
  2. Stir in chili powder and flour and cook for another 3 minutes. Whisk in chicken broth gradually and increase heat to medium high.
  3. Bring mixture to a boil and continue boiling for 35 minutes until liquid is reduced. Stir occasionally.
  4. Remove pan from heat and whisk in chocolate until melted. Season with salt and pepper.
