    Warm peach and blue cheese salad recipe

    Ingredients

    For the Peaches
    • 4 peaches, pits removed and cut in half
    • ¼ teaspoon ground cinnamon
    • 1 tablespoon Calvados or apple brandy
    To Assemble
    • ½ cup crumbled blue cheese
    • Honey, optional
    • ½ cup chopped walnuts
    • 1/3 cup chopped fresh mint leaves
    How to Make It
      For the Peaches
    1. Preheat a water bath to 165°F (73.8°C).
    2. Sprinkle the peaches with the cinnamon. Place in a sous vide bag with the Calvados then lightly seal.
    3. Cook the peaches for 20 to 40 minutes, until heated through and tender.
    4. To Assemble
    5. Remove the peaches from the sous vide bag and place on a plate. Pour some of the juices over the top then sprinkle with the blue cheese. Drizzle with the honey, top with the walnut and mint then serve.
