  • 4 beets
  • ½ cup (120 ml) water
  • 2 sprigs fresh thyme or 2 teaspoons dried
  • 1 teaspoon crushed mint leaves (fresh or dried)
  • Salt, to taste
How to Make It
    The Night Before
  1. Peel and dice the beets. Make sure you’re not wearing your favorite clothes, because the beet juice will stain. Store in an airtight container in the fridge.
  2. In the Morning
  3. Combine all the ingredients in your small slow cooker. Cook on low for 7 to 9 hours. Remove and discard the thyme sprigs and taste and adjust the seasonings.
