    Nut-filled pancakes recipe

    Ingredients

    Batter and Syrup
    • ¼ oz (8 g) fresh yeast or 1 teaspoon dried yeast
    • ½ teaspoon sugar
    • 4 oz (110 g) plain flour
    • oil for frying  
    • 8 oz (225 g) sugar
    • 1 tablespoon lemon juice
    • 1 tablespoon rosewater
    Filling
    • 8 oz (225 g) walnuts, coarsely chopped, or chopped
    • pistachios, almonds or a mixture
    • 4 tablespoons sugar
    • 2 teaspoons ground cinnamon
    • 1 teaspoon orange blossom water
    • 1 teaspoon rosewater
    How to Make It
    1. Mix all the filling ingredients together in a bowl. Prepare the pancakes as described above, but only cook one side of each.
    2. Fill and cook the ataif as described in Ataif-bil-jibn using the nut filling instead of the cheese. Dip in the cold syrup and serve warm or cold.
