    Ingredients

    • 6 eggs (beaten)
    • 2 green bell peppers (peeled and roasted)
    • 2 red bell peppers (peeled and roasted)
    • 2 tbsp oil
    • 1 onion (chopped)
    • 3 tomatoes (peeled and seeded)
    • 1 lb feta cheese or sirene
    • 2 cloves garlic
    • 2 tbsp parsley (chopped)
    • Pepper
    • Salt
    How to Make It
    1. Dice the bell peppers and cut the tomatoes.
    2. Pour the oil in a pan and heat over medium heat. Put the onions and garlic in the oil and sauté for 2 minutes, just enough for the onions to become soft.
    3. Add the bell peppers and mix. Then, cover and cook for 5 minutes.
    4. Now, put the tomatoes ad mix again. Cover and cook for another 5 minutes.
    5. Add the sirene and mix. Add the eggs and mix at intervals.
    6. Pour the parsley and cook for 1-2 minutes.
    7. Turn off the heat and serve immediately.
