Brussels sprout creole recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • ½ red bell pepper, chopped
  • ½ orange bell pepper, chopped
  • 1 fresh tomato, chopped
  • ½ cup water
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • ¼ cup olives, pitted and sliced
  • 1 tablespoon grated lemon zest
  • Sea salt to taste
  • ½ teaspoon freshly ground black pepper
  • 2 cups Brussels sprouts, steamed
  • ½ head red leaf lettuce
How to Make It
  1. Heat the oil in a medium saucepan over medium heat and sauté the onion, garlic, and bell peppers until the onion is translucent.
  2. Add the tomato, water, basil, parsley, olives, lemon zest, salt, and pepper and let simmer for 15 minutes, stirring occasionally.
  3. Add the Brussels sprouts and simmer for a few minutes until warm. Serve on a bed of red leaf lettuce.
